This salad is great with lots of main courses – poached salmon, roast chicken and baked ham. If you can’t find buttermilk, use a mixture of sour cream and milk. Overview Prep time 10 mins Cook time 10 mins Serves 6 Ingredients For the dressing 150ml buttermilk ½ tsp Dijon mustard 1½ tbsp mayonnaise 1 tbsp extra-virgin olive oil 1 garlic clove, grated to a purée For the potatoes 500g small new potatoes ½ tbsp white balsamic vinegar 2 tbsp extra-virgin olive oil 1 head of romaine lettuce, leaves roughly torn 8 spring onions, trimmed and chopped 2 avocados Juice of 1 lime Method Step Mix 150ml buttermilk, ½ tsp Dijon mustard, 1½ tbsp mayonnaise, 1 tbsp extra-virgin olive oil and 1 grated garlic clove together and season with pepper. Step Boil 500g small new potatoes and drain. Put them back in the pan and add ½ tbsp white balsamic vinegar, 2 tbsp extra-virgin olive oil and some seasoning.  Step Toss together and leave while you get on with everything else. (You can do these ahead of time and just leave them.) Step Put the torn leaves of 1 head of romaine lettuce and 8 chopped spring onions into a broad shallow bowl.  Step Halve 2 avocados, stone and cut each half into slices. Carefully peel off the skin. Squeeze the juice of 1 lime over these, season, then add to the bowl. Step Add the potatoes to the bowl.  Step Drizzle on as much of the buttermilk dressing as needed – it should be generous without drowning the salad.  Step Put the rest in a jug and offer it on the side.
